I am so excited to be back today and teaming up with Naturally More to share my new favorite paleo recipe.  It’s been a couple months since I’ve shared some of my favorite recipes here, and I promise this one is going to be the best so far!  Paleo and brownie in the same sentence; it doesn’t get much better than that!  This will be one of the best tasting paleo recipes you’ve ever made and you can start cooking it with your kids too!
I first made this recipe about a month ago, and I’ve been dying to make it again since then.  Shane even asked me over the weekend if I would make those “healthy brownies” again.  I’ve just recently started to do more cooking and baking over the past year, so it makes me feel good to not only be able to make something that is good but to have Shane actually like it and request it again.  And once Shane mentioned wanting them again, I’ve been craving them too!
I made these brownies using my favorite almond butter by Naturally More.  It has added probiotics in it which help to support immune and digestive health.  It also has added flaxseed which gives it a nice little crunch.  If you have never tried almond butter before, you have got to try Naturally More almond butter.  It is my favorite guilty pleasure dessert, yet it isn’t so guilty.  It is SO good, and it is even better than peanut butter in my opinion (and I thought I would never ever say that!)
Cooking with Kids – Paleo Brownies
1 cup of Naturally More almond butter
1/2 cup of melted coconut oil
1 1/2 cups of organic honey
2 eggs
1/2 cup of cacao powder
1 cup of coconut flour
2 tsp of baking soda
6 oz of paleo chocolate chips
4 oz of walnuts
1.  Preheat over to 350 degrees.
2.  Grease a baking dish with olive oil.
3  .Mix all of the wet ingredients together into 1 bowl.
4.  Mix all the dry ingredients together into a separate bowl.
5.  Pour batter into the dish and bake for 30 minutes.
6.  Eat and enjoy and don’t feel too guilty!
Leighton and I have so much cooking together!  Every time I start cooking, I just go ahead and try to include her.  If I don’t, she ends up “cooking” in her playroom by filling up her pots with actual water and spilling them all over the house.  = )  So I’ve learned it’s easier, more fun and even better for me to include her in the fun.  Our Little Partners learning tower has been a complete game changer.  We’ve had it for about a year now, and I don’t know what we would do without it. Cooking with kids is now so easy!
From drawing to play-doh time to cooking, she uses her learning tower for everything.  It gives her the little bit of freedom she craves without her feeling too confined.  She actually loves  getting in her learning tower whenever it’s meal or art time.  It’s so versatile, and on the backside, it even has a chalkboard for her to draw on.
