Chicken Quinoa Power Bowl Recipe

Course dinner, gluten free, lunch, power bowl, protein packed meal, quinoa, vegetables

Ingredients
  

  • 1/4 cup quinoa
  • 6 oz chicken
  • 1 cup vegetables of choice
  • 1/4 avocado
  • salt and pepper to taste

Instructions
 

  • Cook 6 oz of chicken. I used frozen chicken tenderloins and baked them in the air fryer for about 15-20 minutes.
  • Cook quinoa according to package directions. You should just boil it for approximately 5-10 minutes tops.
  • Sauté your vegetables of choice. This time I used Birds Eye Stir-fry Veggies & Sauce to save some time. It uses frozen vegetables in a teriyaki sauce.
  • Add your quinoa to a bowl.
  • Shred up cooked chicken and add to the bowl.
  • Add in your cooked vegetables.
  • Sprinkle with sesame seeds and top with avocado.
  • Season with salt and pepper to taste and enjoy your power bowl!
