Sweet Potato Casserole with Marshmallows Recipe

Ingredients
  

  • 3 large sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 3 tbsp orange juice
  • 1 pinch ground cinnamon
  • 10.5 oz package of mini marshmallows

Instructions
 

  • Preheat oven to 350 degrees.
  • Wash, peel and cut sweet potatoes.
  • Add them to a large saucepan, cover with water and boil.
  • Cook sweet potatoes for approximately 20 minutes under tender.
  • Remove the sweet potatoes from the heat, drain them and mash them.
  • Add the mashed sweet potatoes to a large bowl and mix in the butter, brown sugar, cinnamon and orange juice.
  • Mix and mash until the ingredients are mixed in with the sweet potatoes.
  • Spread the mixture into an 8 x 12 baking dish and top with marshmallows.
  • Bake the sweet potato casserole in the oven for approximately 30 minutes until the mini marshmallows are golden brown.
