Chickpea Cucumber Salad

Course: lunch, Salad, Snack

Ingredients
  

  • 1 can chickpeas
  • 1/2 cucumber
  • 1 tbsp onion
  • olive oil
  • sea salt
  • pepper

Method
 

  1. Open can of chickpeas and drain water. Add to a bowl and set aside.
  2. Wash and cut cucumber into small cubes. I leave the peel on my cucumber, but you can cut yours off if you want. Add cucumber to bowl with chickpeas.
  3. Cut and cube onion slices and add to bowl.
  4. Add olive oil, salt and pepper to taste. Mix everything the in the bowl together. Serve cold and enjoy!
