Turkey Sausage, Sweet Potato & Rice Protein Bowl

Ingredients
  

  • 3 cups Minute Spanish Rice
  • 1/2 lb sausage
  • 1 sweet potato
  • 8 oz kale
  • 1 pinch salt

Instructions
 

  • Preheat the oven to 375 degrees.
  • Wash and dry potato to bake and put in the oven after it has preheated.
  • Bake for approximately an hour. As an alternative if you're short on time, you can wrap the potato in a damp paper towel and bake in the microwave for 5 minute instead of baking.
  • Brown sausage in a skillet. I used turkey sausage, but you can use any kind. Matt prefers pork sausage for the flavor. Drain after cooking.
  • Rinse skillet and cook the kale on stovetop for approximately 15 minutes or until tender.
  • Peel the skin from potato and then dice up potato.
  • Prepare Spanish Minute Rice Cups in the microwave per the packaging instructions.
  • In a large bowl add rice, sausage, sweet potato and kale.
  • Add salt to taste and enjoy!
