With fall coming, how does a yummy chicken quinoa power bowl sound?! Well, I’ll tell you, it is so yummy! And it’s not that hard either. Feel free to customize it as you want. You can swap out meats or even boil or grill them instead of baking them. You can add your choice of vegetables. I used frozen veggies this time, but you can use fresh too. It is completely up to you! I used teriyaki sauce, but it would be so good with a gluten-free teriyaki sauce or sweet chili sauce too!
I also topped my bowl with sesame seeds and avocado, but the toppings are up to you too! This bowl is so good and so easy to customize too. Keep reading for my recipe that is great for a quick lunch or a super-filling dinner!

Chicken Quinoa Power Bowl Recipe
Ingredients
- 1/4 cup quinoa
- 6 oz chicken
- 1 cup vegetables of choice
- 1/4 avocado
- salt and pepper to taste
Instructions
- Cook 6 oz of chicken. I used frozen chicken tenderloins and baked them in the air fryer for about 15-20 minutes.
- Cook quinoa according to package directions. You should just boil it for approximately 5-10 minutes tops.
- Sauté your vegetables of choice. This time I used Birds Eye Stir-fry Veggies & Sauce to save some time. It uses frozen vegetables in a teriyaki sauce.
- Add your quinoa to a bowl.
- Shred up cooked chicken and add to the bowl.
- Add in your cooked vegetables.
- Sprinkle with sesame seeds and top with avocado.
- Season with salt and pepper to taste and enjoy your power bowl!
