Gluten Free Monster Cookies for Easter that Even Kids Will Love

If you’re looking for some good sweets to serve for Easter that everyone will love, these monster cookies are it. They are perfectly pastel for Easter, they taste so good, they are gluten free, and they are “healthier” than most cookies. You can honestly make them even lighter by swapping out other things too. I use Enjoy Life chocolate chocolate chips that are dairy free and semi-sweet. I use Kerrygold irish butter. And I use cashew butter that has no sugar or other sweeteners added. I also don’t add any sugar into the cookies (but of course the M&Ms and chocolate already have sugar in them.)

After you make the mixture, I recommend tasting them and see how you think it tastes. You can always tweak them and make them sweeter, thicker or softer because everyone’s tastes are different. These have been tested in our house and all the kids love them too! Even Matt loves them. I have made them for several get togethers, and they are always a hit. They’re also so quick and easy to make. It only takes 7 minutes to bake them!

Gluten Free Monster Cookies Recipe

Gluten Free Monster Cookies

Course Dessert

Ingredients
  

  • 1 cup oats
  • 2 eggs
  • 1/2 cup cashew butter
  • 4 tbsp butter
  • 1 tsp baking soda
  • 1/4 cup chocolate chips
  • 1/2 cup M&Ms

Instructions
 

  • Preheat oven to 375 degrees.
  • Mix in a bowl the oats, eggs, cashew butter and chocolate chips.
  • Melt the butter in the microwave for approximately 10 seconds.
  • Add butter to the mixture in bowl and stir everything together well. If it's too dry, you can add more cashew butter. If it's too wet, you can add in more oats.
  • Once mixed, add M&Ms to the mixture and gently stir in.
  • Roll the cookie dough mixture into balls and space them out on the cookie sheet.
  • Bake for approximately 7 minutes. Allow 1+ hours for them to cool and harden and enhoy!
