Jalapeño Fried Rice Recipe

That means a lot of driving all over the place and a lot of long nights past bedtime. That’s when I’m especially looking for a good, filling and easy meal that the entire family will love! These Minute® Jalapeño Rice Cups are a tasty blend of onion, green peppers and mild jalapeños that will add just a hit of spice!

Minute® Rice Cups are so quick and easy to cook! Simply remove the film from the top of the cup and pop one cup in the microwave for 60 seconds. Two cups for this recipe take 90 seconds in the microwave and feeds two people. Heat up more to serve your entire family; they’re just so easy! And they aren’t just easy, they’re good for you. Jalapeno Fried Rice Recipe

Jalapeño Fried Rice

Course dinner, lunch

Ingredients
  

  • 2 cups Minute Jalapeño Rice
  • 2 eggs
  • 1/4 cup peas
  • 1 jalapeño
  • salt to taste

Instructions
 

  • Heat your skillet over medium heat and fry 2 eggs.
  • Cook peas on the stove over medium heat according to package instructions.
  • Prepare Jalapeño Minute Rice Cups in the microwave per the packaging instructions.
  • Wash and slice jalapeño.
  • Mix rice, eggs, peas.
  • Add a pinch of salt to your liking.
  • Top with jalapeño slices to your liking. You can add them raw or heat them up on the skillet. Enjoy!
