Giveaway Sneak Peak + Breakfast Recipes

Lazy Man’s Omelet

I woke up this morning with a bit of a cold, so I decided to be lazy when it came to cooking breakfast (plus I’m not much of a chef to begin with.)  I scrambled up two eggs with celery, bell peppers, cherry tomatoes and onions.  I basically just gathered all the spare vegetables we had around the house that I wanted to use up before they went bad.  Once scrambed, I topped with avocado and a little salt and pepper.  The best part was definitely the avocado.  It was really good and filling, and is definitely a lazy man’s omelet in my opinion.  I’ve never been good at flipping an omelet in the skillet, and I always end up browning one side too much.  This was much, much easier.

 
 

Primal Scotch Eggsο»Ώ
This next recipe is one I’ve made quite a few times.  I got it off Mark’s Daily Apple, and it is completely paleo.  It is pretty easy, and it only requires 2 ingredients.  Does it really get any better than that?!  I usually end up making them the night before because it’s just more convenient for me.  Shane is really bad about getting up and going to work without eating breakfast, so this worked well for him to just throw in a tupperware bowl and heat up in the microwave the next morning.     ο»Ώ

This last recipe is one that my mom has been making for as long as I can remember, but I revised it just a bit last year when I started eating paleo.  This recipe takes a bit of time dicing up vegetables and ham, but it’s still pretty easy.  It’s one of those really convenient meals you can heat up and eat the next day for breakfast or dinner.  Quiche is great anytime, and you won’t even miss the crust…much.  = ) 
 
 
Crustless Quiche
6 eggs
1/2 pint heavy cream
1/2 onion diced up, 1 small bell pepper diced up
9 oz package of ham diced up
8 oz. sharp cheddar cheese shredded
Put a small sliver of butter on top of each muffin.
Oil muffin pan with olive oil.
Fill each muffin pan about 1/2-3/4 full with mixture.
Cook 20-25 minutes or until golden brown at 375 degrees.ο»Ώ
