I try to mainly eat paleo, and this can be quite a challenge sometimes. With school taking up most of my time now, this makes cooking healthy meals even more of a challenge. Instead of trying to find a paleo recipe, I was inspired to take recipes from within the magazine and make them my own. I tweaked them here and there to make them fit paleo, my budget, and still satisfy anyone’s non-paleo appetite. As you probably saw here, eating healthy foods is even more important to me now more than ever, so I am always looking for more ways to save time and money while eating healthy. I decided to create a spin on the traditional stuffed bell peppers recipe and made paleo pizza stuffed bell peppers. I have always loved stuffed bell peppers, but I didn’t want the rice, and the ground chuck can be a little bland, so I improvised and included one of my favorites – pizza! Paleo Pizza Stuffed Bell Peppers Recipe
Makes 8-9 peppers
Time: 1 hour
Ingredients
1 Tbsp Olive Oil
1/2 Red Onion, diced (or white)
8-9 bell peppers
2lbs of Italian Sausage (mild or hot)
Small Can of Mushrooms (or fresh)
Small Can of Black Olives (any type of olives, fresh or canned works)
1 Jar of Spaghetti Sauce
4 oz of Tomato Paste
Salt and Pepper (to taste)
Directions
Heat oven to 400 F
Heat olive oil in a large pan over medium heat. Once olive oil is hot, add onions and mushrooms to pan and sauté. It should take about 3-5 minutes. Take off stove and set them aside. In a large pan, cook 2lbs of Italian sausage, browning it just slightly (since it will still cook in the oven later, you don’t want it to get burned.) While cooking meat, slice tops of bell peppers off and remove seeds. Then drain meat and mix it with tomato paste, spaghetti sauce, mushrooms, onions and olives. Add salt and pepper. Mix well and then scoop evenly into bell peppers. Place the stuffed bell peppers into a baking dish. Bake for about 35-45 minutes until the bell peppers are tender. You can also add garlic or any other spices that you like. If you are not doing strict paleo, you can even add shredded cheese or grate fresh parmesan on them like I did for friends and family.
