I’m back today with a super easy recipe that is perfect for spring. It is super refreshing too! It is a chickpea cucumber salad. If you love cucumbers, you will love this salad! Before I tried it, I didn’t even know I was a big fan of chickpeas, but they pair so well with the over ingredients that it makes a light, refreshing salad.
This chickpea cucumber salad is great almost any time of the day. I eat it for lunch often, but it’s also great as a side item. It would even be wonderful at your next picnic or summer get-together! And chickpeas and vegetables and olive oil, it is packed with healthy protein, carbs, and fats. Yum! Check out the recipe below and let me know if you try it! Chickpea Cucumber Salad
Ingredients
- 1 can chickpeas
- 1/2 cucumber
- 1 tbsp onion
- olive oil
- sea salt
- pepper
Instructions
- Open can of chickpeas and drain water. Add to a bowl and set aside.
- Wash and cut cucumber into small cubes. I leave the peel on my cucumber, but you can cut yours off if you want. Add cucumber to bowl with chickpeas.
- Cut and cube onion slices and add to bowl.
- Add olive oil, salt and pepper to taste. Mix everything the in the bowl together. Serve cold and enjoy!
I never thought of pairing chick peas w/cuke…this looks yummy & I’ll definitely be trying it!
